Vegan Coconut Banana Ice Cream is the easiest frozen dessert you can make! Toss the ingredients in a food processor and it’s ready in minutes.
- 4 large frozen bananas
- 1/2 cup chilled coconut cream
- 1 cup Medjool dates, pitted (about 10 dates)
- 1 teaspoon ground turmeric (optional)
- Combine the bananas, coconut cream, dates, and turmeric in the bowl of a food processor. Turn the processor on high and let it run for a total of about 5 minutes. It will take this long to make the banana mixture smooth and creamy.
- Serve immediately.
notes
- This recipe is best served just after you make it. It does not freeze well.
- You can use 2 tablespoons of maple syrup instead of the dates, if you prefer.
- Don’t like bananas? You can use frozen mango chunks instead. You’ll need about 3 cups.
