Vegan Coconut Banana Nice Cream

Vegan Coconut Banana Ice Cream is the easiest frozen dessert you can make! Toss the ingredients in a food processor and it’s ready in minutes.

Vegan Coconut Banana Nice Cream
  • 4 large frozen bananas
  • 1/2 cup chilled coconut cream
  • 1 cup Medjool dates, pitted (about 10 dates)
  • 1 teaspoon ground turmeric (optional)
  1. Combine the bananas, coconut cream, dates, and turmeric in the bowl of a food processor. Turn the processor on high and let it run for a total of about 5 minutes. It will take this long to make the banana mixture smooth and creamy.
  2. Serve immediately.

notes

  1. This recipe is best served just after you make it. It does not freeze well.
  2. You can use 2 tablespoons of maple syrup instead of the dates, if you prefer.
  3. Don’t like bananas? You can use frozen mango chunks instead. You’ll need about 3 cups.
