Easy Awesome Almond Cheese

My husband, Mike, gave up dairy when he learned it raises the risk of prostate cancer, which runs aggressively in his family.  He missed cheese so much…until he found nut cheese.  There are loads of great nut cheese recipes all over the internet.  After trying many of them, he created this one because it was faster and easier than others, but just as good.  Other recipes call for taking the skins off the almonds or baking the nut cheese.  He thinks it’s just as good without that extra work.  

Citrus Grilled Salmon or Trout

This recipe comes from Carla, a restaurant owner in Newfoundland, Canada...so she KNOWS how to make incredible fish.

We love to grill salmon or steelhead trout!  You can get both with skin on one side .  This comes off very easily after cooking. 

Pesto stuffed chicken breast with bruschetta sauce

Looking for delicious Italian food without all the carbs?  This recipe from the American Diabetes Association will make you forget about pasta. 

Chocolate Chia Pudding

Chia seeds are pretty magical in how they puff up to absorb liquids.  This recipe works great using real milk or plant-based milks and either honey or other sweeteners of choice.  Or skip the extra sweeteners entirely and let the fruit shine through.  This recipe comes from the helpful people at Eat Smart Move More Virginia.

Looking for a healthier pizza, without wheat gluten or any flour?  Here’s a tasty crust from the nice people at North Dakota State University.  

Zucchini Pizza Boats

Oregon State says these are good for kids, but I say they are good for anybody who wants easy quick pizza without the carbs.  If you are on a strict ketogenic plan, either minimize the pasta sauce or replace it with fresh chopped tomatoes.  Use more zucchini and/or less cheese if you want to make this even healthier.
